A short-grain heirloom variety grown on hill terraces at 1,800 m, watered by rain and snowmelt and left unpolished so the bran stays on. It cooks nutty and firm, holds its shape in a bowl and takes about twice as long as white rice — soak it for thirty minutes and it behaves.
